Spicy Buffalo Ranch Chicken Meatballs

When I gave these to Chris for dinner the other night (Dillon is on an afternoon shift right now), I thought that this time I overdid it with the spicy part lol. It took 2 glasses of milk and a runny nose, but he did eat them all and enjoy them lol!

This is an easy recipe to make and if you do as I did and double it, it’s an extra “Freezer Meal” for another day This is the time of year that I try to make double of whatever I am making to freeze for the busy month of December when cooking time is at a minimum, ensuring I not only get the Christmas stuff done I want to but that everyone is also being fed good homemade meals with little effort on my part!

Meatball “Cupcakes”

I suppose the title may not sound very appetizing but “the boys” ate three each of them lol!

I bought 2 big packages of lean ground beef when I got groceries last week because it was a really good sale and I thought it would be a great opportunity to add to my list of “Freezer Meals.” I not only made the meatballs for this recipe, but I also made another 3 dozen meatballs to freeze for another night’s dinner.

This recipe makes 12 “Cupcakes,” enough for 2 dinners in this household so I got at least 4 meals out of the “Club Pack” of ground beef! Can’t beat that for under $10!

Enchilada Meatballs

The past weekend we had a sort of Mexican food binge.  I made tacos, burritos, taco salad, these meatballs etc. etc. etc. lol.  The easiest way to put it was that we had a feast lol! 

These meatballs are fast and easy to make, taste so much better than store bought meatballs and made enough that I was able to freeze a pan for another day!  Bonus!

Turkey Meatballs with Spinach and Sundried Tomatoes

Let me start by saying these smelled so good while they were cooking lol…. enough so that I took my chances and had a few myself with dinner!

I had some spinach still frozen and some sundried tomatoes in the fridge from when I made my Tuscan Garlic Chicken last week and thought these would be a great addition to ground turkey to make some meatballs for dinner.

These were so good that I didn’t even add a sauce to them when they were cooking, I just piped some tzatziki sauce on them right before serving!

Swedish Meatballs

I can remember eating these from the time I was little.  I honestly can’t remember who it was that passed on the recipe, but I do know these Swedish Meatballs were always part of a Christmas Eve gathering we attended every year when I was a kid.

Making your own meatballs is easy, doesn’t take that long and they taste so much better than frozen meatballs. Even if you don’t make the meatballs yourself, you should at least try them with this sauce!
