Glazed Meatloaf

Happy Birthday To Me lol! I am writing this post on Thursday so that I can take today off! I actually made this meatloaf on Wednesday and just a note, this recipe makes 2 meatloaves so if you don’t want to make the two rather large meatloaves cut the recipe in half. My freezer meals for the month of December are done… I technically do not have to cook for the whole month of December now but I decided to do a few more so that I won’t have to worry about it for the beginning of January as well lol… the after Christmas hangover season. Today (Thursday) I am going to make a couple of pans of everyone’s favourite “Baked Macaroni,” and that is it… no more cooking until sometime in January… thaw and reheat and that’s it…. woo hoo!

As with most meatloaf recipes, this is quick and easy to mix together and get in the pan and the glaze is just as easy to make and brush on the meatloaf part way through cooking and is absolutely delicious. It also freezes wonderfully so you too can have a freezer meal on hand for those days where you just don’t want to!

Brown Sugar Glazed Meatloaf

What a weekend!!!  Saturday I decided to clean and sort the storage under our basement stairs.  While it was a nice trip down memory lane, it was also a big crazy mess.  Thankfully Dillon was at home (part of the reason I decided to do it on a Saturday lol), so I could use his muscles to deal with the heavy stuff for me! It took all day Saturday and by that night and most of Sunday I could barely move lol.  Guess it’s all part of the growing old thing.  While I did accomplish what I set out to do, dinners on both days were more rush jobs than actual planning!

Saturday we settled for jarred pasta sauce with meatballs and pasta.  On Sunday I at least had the foresight to take some ground beef out of the freezer and was able to make this delicious Brown Sugar Glazed Meatloaf that I served with garlic mashed potatoes and green beans!

Taco Meatloaf

Yes, another taco meat recipe…. and another meatloaf recipe…. can’t help myself…. we all love almost any kind of “Mexican” based foods.  This recipe combines the taste of taco meat into a cheesy topped meatloaf! And to make things even better, this recipe makes 2 medium sized meatloaves, so you can have one for dinner the night you make it and freeze the other one for a quick meal another day!

Meatloaf “Cupcakes”

When I was talking to Dillon one day about trying to make some “muffin tin” recipes, his first idea was some sort of meatloaf variation…. Meatloaf Cupcakes.  He asked me if this was something I could make.  I told him I could, I would just have to figure out the “logistics” of making them lol… What would I use for the “icing” and things like that.

Several months later, and during a week when I am completely exhausted, I decided to try them.

This might seem like a really good “Kid’s Meal,” but both Dillon and Chris really enjoyed them!

Glazed Chicken Meatloaf (with Roasted Potatoes)

I put the potatoes in brackets because I decided to add them to the pan after I did my ingredients pictures and everything else… and the fact they aren’t really a recipe lol.

This is a different, healthier take on meatloaf, using ground chicken instead of beef and passed the dinner test!

Bacon & Cheese Rolled Meatloaf

Tonight’s dinner was a bit of a last minute effort.  I spent the day cleaning and preparing lunch for company tomorrow so although I had taken ground beef out of the freezer I had no clue what I was going to make with it… I didn’t decided until about an hour before dinner.  Talk about cutting it close! Phew!

Crock Pot Pizza Meatloaf

 

 

Today I made my “boys” a pizza meatloaf in the crock pot.  I love cooking in my crock pot because I can just fill it and forget it and get on with whatever else I am up to that day.

Chris and Dillon love meatloaf but I still like to change it up once in a while.  This time I made it like a sort of crust less pizza, and they loved it!.  It was very filling because of all the cheese I think. Plus they had the rest of the Cucumber Salad (which lasted barely two meals for them) and garlic bread…. so they were full lol!  (I also made a Raspberry Crisp, just like the Strawberry Crisp I made before… and it was delicious).

Sweet Pepper Rings Meatloaf

I bought some peppers, intending to make stuffed peppers and then changed my mind.  I decided to make little meatloaves and to cook them inside a slice of sweet pepper, placing them on a generous layer of Spirited Mickie Barbeque sauce and then topped with melted cheese!

Chris and Dillon loved them so I decided to share the recipe with you!
