Fast & Easy Pasta Side Dish

I made this a few weeks ago,  and again last night to have with dinner.

In the time it takes to cook the pasta, you can have the rest ready to throw in.

You could even add some cooked and shredded chicken and additional veggies to make this your main course.

Either way, it is a nice,  light summer side dish!

Mexican Lasagna Rolls

I didn’t know what to actually call these.  I started thinking about them after I made Lasagna Rolls and finally made them last week. Between using enchilada sauce, taco seasoning, salsa, refried beans etc., I couldn’t decide on which ingredient to base the name on so I settled on just calling them Mexican Lasagna Rolls lol!

This recipe makes quite a few of these, but they freeze and reheat great and were a big hit with “the boys,” even Chris who isn’t a big fan of refried beans!

Alfredo Chicken Stuffed Shells

I made this the other night for a change of pace.  I normally make stuffed shells with a filling not unlike manicotti.  I knew I had lots of cheese, a few chicken breasts I had cooked earlier in the week with the intention to make something with, a jar of alfredo sauce and the list goes on.  It just seemed meant to be lol! The combination of the alfredo and tomato sauces is amazing!  So here they are…. Alfredo Chicken Stuffed Shells! (I made enough that I was able to freeze one pan of them for a quick dinner another night!)

Making Fresh Pasta for the First Time

Dillon bought me a combination grinder/mincer/pasta maker for Christmas.  He knows that I have been wanting to try my hand at making my own sausages for a while and the one he bought for me also does pasta.  Since I don’t have any of the actual sausage casing…yet… I decided to try my hand at making fresh pasta!

Cheese Cappaletti with Tomatoes in a Creamy Cheese Sauce

Another really long title for an easy to make but delicious dinner!

I served it with a nice salad and garlic bread.

Sandie

These are all the ingredients I used.

I put the Cappaletti in a pot of boiling water for 7 minutes.

I diced the tomatoes and added them to the pot with about 2 minutes remaining.

While it was cooking I made the cheese sauce.

I melted butter in the microwave on high heat for about 45 seconds.

I removed it, added the flour and whisked to form a paste.

Next I added the milk and whisked until all combined.

I microwaved it on high heat for 4 minutes, whisking every 60 seconds until it started to thicken.

I added all but 1/2 cup of the grated Italiano cheese…

And whisked until the cheese melted.

Next I drained the pasta and tomatoes, then added the cheese sauce.

I mixed it all up…

Poured it into my prepared pan and topped it with the remaining grated cheese and the parmesan.

Then I popped it in the oven at 350 degrees for about 20 minutes to heat through.
