Chocolate Macaroon “Nests”

I have been making these “Macaroons” for as long as I can remember, but I have to admit that turning them into “nests” never crossed my mind until I saw a picture somewhere.

I can recall my mother making them when we were kids and even before the cookies were set we were fighting over who would get to eat the little bits that fall off the spoon when you are dropping them onto the cookie sheet!  Now the ones we made also had coconut and I would have switched out a cup of oatmeal for coconut but neither one of my kids like coconut… strange beings!  They must have gotten that anomaly from their father!

Easter Mint Patties

I first saw this recipe before Christmas, put it on my to do list, but it didn’t happen.  So, when I saw the same sort of thing on Pinterest but done in Easter colours, I just had to try it!  This is where I saw the original recipe!

Now I of course didn’t follow the recipe exactly.  I had to employ my “cheater” methods to make it faster and they actually worked!!!!

While you can find the actual recipe at the link above, I will walk you through the steps I took doing it my way.  The end result was great and they are very yummy and minty.

Chicken Bacon Ranch Bake

I tried this for dinner last night and even though I am not supposed to eat any sort of meat, just the smell alone was enough for me to have some, consequences notwithstanding lol.  AND it was so worth it!

Chocolate Layered No Bake Pudding Cake

This recipe is very simple and the actual steps are very fast, it is the waiting in between steps for it to “set” that takes the time, so plan on making this the day ahead of when you would like to serve it.

It has a “panna cotta” sort of texture to it with delicious, chocolatey flavour!

Healthy Breakfast Scramble

I had something like this when Chris and I went to a little diner for breakfast during his Christmas holidays.  It was REALLY good.  It is hard to find breakfast options at most restaurants, especially diners, that are meatless.  I saw this on the menu I decided it was worth a try, and it was well worth it.

This morning I was hurting from my attempt at gardening yesterday so breakfast this morning had to be easy, or they were having Raisin Bran lol.

Happy Pretzel Day!

Last night I read somewhere that today, April 26th, is National Pretzel Day lol. Not here in Canada, but it was certainly worth making some sort of Pretzel treat to me.
I saw a recipe for Pretzel Bread on Pinterest at Tara’s Multicultural Table – Tara’s Multicultural Table – Pretzel Bread Recipe.

It looked so good I just had to try it.  And I have to say, it did not disappoint.  The crust tastes just like eating a soft pretzel and the inside was nice and soft and chewy.  My husband is home sick from work today and between the two of us, we literally ate half a loaf of it.  It is THAT good.
