Balsamic Roasted Asparagus and Mushrooms

I remember a while back asking Chris if he liked asparagus. He said No. I then asked him if he had ever had it…. again he said No lol! I made it for them the first time with parmesan cheese and both he and Dillon loved it…. so much so that he asked me to make it more often. I wonder what else he doesn’t “like” that he hasn’t ever tried??? I had some mushrooms that I had to use up before they got nasty, so I decided to add them to the asparagus because who doesn’t like roasted mushrooms??

This is a very quick and easy recipe roasted in the oven with mushrooms, balsamic vinegar, dill etc., with a prep time of about 5 minutes. You can’t beat that for a delicious side!

“Loaded” Scalloped Potatoes

Last night I decided to try something different with some scalloped potatoes.  I don’t usually make them myself because Chris usually isn’t a fan of non “instant” scalloped potatoes but I still took a chance.  Thankfully, he really like them lol!

Taco Salad

I had another Dr’s appointment this morning so I am late posting!  I should have typed it up last night but we decided to watch a movie.  “The Hateful Eight.”  It wasn’t too bad, certainly different lol!

When I made the Taco Cupcakes, I wanted something to have with them.  I suppose I could have made a regular salad but I knew I had enough of the seasoned ground beef to make this and everyone loved it the last time I made it, so Taco Salad it was!

Easy Baked Hash Browns

My “boys” love those frozen shredded potatoes.  Whether it be in “Crack Potatoes,” just fried up with butter and lots of garlic or now, in these Easy Baked Hash Browns.  There is just something about the way they get all nice and crispy and brown and delicious lol.

This is another quick and easy recipe.  I made mine ahead of the meal because I wanted to see if they would crisp back up reheating them.  They turned out just great.  Now I plan on making a batch or two to freeze for Sunday morning breakfasts, but they WERE great with dinner last night as well!

Garlic Cheesy Mashed Potatoes

Now, who in their right mind doesn’t like Mashed Potatoes?  Especially when you add garlic and cheese?  And cream cheese!  That is the secret ingredient to make these smooth and creamy and they freeze so well.  Sometimes I think they taste better after they freeze.  They get that nice outer rim of crispy potato and cheese?  Yum!

I know mashed potatoes are not difficult to make, I am just sharing with you my way of making them!  You will thank me for trying it, even if it’s just nothing more than adding cream cheese to them!
